Khajur Mawa Roll is very tasty, low in calories, nutritious recipe. Dates is a fruit which I believe every kid likes, as kid my mom used to make us eat pitted dates stuffed with as there is a say in Gujarat that dates is good for growing up kids as it is rich in iron, protein and fibres,helps to improve digestive system, lower bad cholesterol and last it gives warmth in winter which helps to boost your immune.
Kids gets easily bored with repetition of any thing it also includes food. So we have to try new things and come up with new ideas to feed them, this recipe is not new innovation but is a new version of Khajur ladoo which is very popular in Maharashtra, Gujarat and Rajasthan. Here is my version of Khakur Mawa roll combination of Sanjeev Kapoor's Khajur and my take on mawa barfi.

Ingredients :
500 gms Khajur / Dates paste
50 gms Poppy seeds / Khus - khus
50 gms crushed cahsew
50 gms crushed almonds
50 gms crushed pista
100 gms/ 1/2 cup mawa grated
50 gms sugar
2 tbsp gaund / edible gum
1 tbsp elaichi powder
1 tbsp rose water
3 tbsp ghee
Other things required
Plastic sheet or Foil
Broad non stick pot 15" diameter
Small pan around 8" diameter
wooden spatula
sharp knife
Method For Khajur Roll:
- In a pan cook khajur / dates paste with 1 tbsp ghee, 2 tbsp poppy seeds.
- Cook the mixture till it forms a ball at this point add elaichi powder, approx will take 15 mins. Transfer to a plate
- In a small pan add 1 tbsp ghee fry edible gum till it fluffs up. Transfer to a plate. When cooled grind to powder
- When the kahjur mix is cooled add in powdered gum and mix well.
Method For Mawa stuffing:
- Dry roast your nuts in a pan or microwave on high for 1 min.
- When cool, grind the nuts using pulse technique.
- Heat pan add ghee and grated mawa, roast till it melts and nuts and sugar and cook till it leaves the sides of the pan, add in rose water.
- Transfer to a plate and let it cool.
Method For Making the Roll:
- Roll the mawa stuffing into a log of 3" in diameter and 9" long
- On greased foil or plastic sheet roll out the kahjur roll into 9" long and 8" wide sheet.
- Place mawa roll on the end and tightly roll. Warp in foil and refrigerate for 1/2 hour.
- Sprinkle poppy seeds on foil and roll the khajur roll so that the seeds stick to all the sides.
- Wrap and refrigerate for 20 mins.
- Cut the roll into 1" thick disc.
Notes :
- If khajur paste is not available soak the chopped and pitted dates in warm milk for atleast 3 hrs. Drain and grind to paste with no liquid or else you will end up cooking for longer time.
- Use of mawa is optional can use kaju katli recipe or pista burfi recipe also.
- You can also use left over sweets especially after Diwali we would have lots of burfi and other sweets. Grate the burfi's, add 1 - 2 tbsp milk with 1 tbsp ghee and cook till it leaves the pan.
- Can use sugarfree to make sugar free version.
