Corn Spinach Open Sandwich

Theme : Cooking with Corn


For the final post under the theme of Cooking with Corn i was wondering what to post, and as they say you will make it if you are determined, i had to go for a meeting and usually I carry something like rolls, sandwich as in Nigeria we don't get good vegetarian food, and the hold ups are such at times I have been in the hold up for 3 hrs and nothing moves, during these time my carry take helps me a lot and came up to make Corn Spinach open sandwich, as it is very quick and easy, i always have some frozen spinach as it is very handy and also a can of corn kernels and baby corn in pantry do here is quick version of my take on sandwich.



Preparation : 10 mins
Cooking time : 15 mins
Serves : 2
Difficulty level : very easy
Course : Breakfast, Lunch Box

Ingredients :
4 slice of bread
2 slice of mozzarella cheese
1/2 cup corn kernels
1/2 cup blanched and chopped spinach
1/4 cup cheddar cheese
1/4 cup chopped onion
1/2 tsp thyme dried
1/4 tsp dry rosemary
1 tbsp pepper
salt to taste
1 tbsp butter

Method : 

  • Heat butter in a pan, add in herbs, chopped onion and saute for 2 mins or translucent.
  • Add in blanched and chopped spinach,corn, salt and pepper, saute for a min.
  • Remove in plate and let it cool for a while. Add in grated cheese and mix well
  • Take a slice of bread spread the mix.
  • Cut the cheese into 1/2 " strips or cut into 8 strips.
  • Make a criss cross and bake in preheat oven for 10 mins or till crisp and golden brown from bottom.
  • Wrap in grease proof paper and pack or serve hot with sauce of your choice
Note:


  • You can use corn of your choice, make sure you pre-cook the corn if using fresh.
  • Can also add paneer or tofu instead of cheese to make a healthy version.
  • I have used frozen spinach as i keep it handy.
  • Use of herb is your choice, curry masala or any other spice can be added if using paneer

    1. Thanks dear, have to make something new to feed my husband he is not easy to feed, he is like kid so have to find new ways to make him eat the food i like. All thanks to him he is sufficing my need of being a mother for now
