Tomato Chips


On a rainy day a cup of hot coffee / tea and to accomplish it some chips makes our day. Chips means lots of carbs, fats and kcal, but this chip of mine is mouth watering yummy and yet not heavy on carbs and fat as they are prepared from zesty tomatoes. Yes you read it right they are tomato chips and that to made out of the tomato skin which we usually discard after blanching.
This dish is my hubby's favourite snack, also takes him to the golden memories of Italy where he worked for quite sometime. He had this wage idea about how they are made but never sure. As you know i love experimenting with things and am known as dare cook in our circle so thought why not try. I use tomatoes a lot in my cooking such as making pasta sauce, marinara sauce, chutney's, soups, preserves, used in curries, gravvy and many of these require blanching and we usually discard the peels. I have made used of these skins to make my own version of chips and they turned out to be val-la instant hit in my parties. It pairs well with Drinks, Wines, Cocktails or even simple juice. Kids love it because of its vibrant rich red colour.

Lets learn how to make Tomato Chips.

Preparation time : 15 mins
Cooking time : 10 mins.
Serves : 3

Ingredients:
10 medium sized firm tomatoes
Pomace olive Oil* for frying
1/2 tsp red chilli powder
2 tbsp cornflour
a pinch of Italian Seasoning*
Salt to taste

Method : 

  1. Bring a large sauce pan of water to boil.
  2. Make a X cut at the bottom of the tomatoes and remove the eye
  3. Drop them in boiling water and let it cook for 2 min or till you see skin peeling.
  4. Transfer it immediately to bow filled with ice.
  5. Carefully peel the skins and drain excess water by placing them on kitchen towel.
  6. Add in cornflour, salt, spices and mix well.
  7. Heat oil in a frying pan, when really hot drop in peels in batches. 
  8. Fry for 2 mins or till it crisps, drain on kitchen towel / paper.
  9. Serve with any drinks, juice of your choice.

Note: 
Use of oilve oil and Italian seasoning is optional. It all depends on your choice.
