Tarte Flambee

Tarte Flambee is to the northen Alsace region of France. Tarte flambee is the perfect response to Italian , in Germany it is called a Flammkuchen and is very popular and will find it on the menu of French Restaurants. Tarte flambee is made from thin crust pizza or bread dough generously spread with creme fraiche and sprinkled with onions and bacon. I have not used bacon for my vegetarian version. You can also add in spinach or mushroom. The recipe which am going to share is one of the basic and traditional Tarte Flambee d'Alsace.

Preparation time : 30 mins
cooking time : 30 mins
Serves : 2

1 cup all purpose flour
1/2 cup luke warm water
1/2 tsp dry active yeast
1 tsp sugar
1 tbsp olive oil
1/2 tsp kosher / sea salt.

For topping :
2 medium onions sliced
1 tbsp butter
1/2 cup cream
1 tbsp curd
1 tsp all purpose flour
1/2 tsp Italian mix herbs
1/4 cup grated cheese

Method : 
For Crust : 

  1. Dissolve yeast in luke warm water, sprinkle sugar to activate yeast. Cover and let it sit for 5 mins or till frothy.
  2. Mix flour, salt in a bowl add in yeast and knead dough. Dough should be soft, if you feel that the water is not enough add tbsp of water to get soft dough.
  3. Smear oil and knead again till it bounces back. Cover with cling and keep till it doubles.
  4. When it doubles punch down and knead and keep it again to rise.
For Topping : 
  1. Melt butter in a pan, add onions and saute on slow flame till it caramelizes. It takes about 15 to 20 mins. Transfer it. Let it cool.
  2. Mix cream, curd and flour in bowl till smooth.
For Making Tarte Flambee : 
  1. Pre heat oven at full mark in your oven. Place the rack in the lowest shelf.
  2. Roll out or stretch the dough to thin pizza, you can shape it in triangle, round, rectangle any desired shape, prick with forks.
  3. Place on baking sheet or pizza stone, form a border or leave it little thick on edges and bake for 4 mins.
  4. Remove from oven, spread the cream mix, sprinkle onion, season with crushed pepper, salt and Italian Herb mix.
  5. Bake for approx 15 to 20 mins or till crust is crisp, golden brown.
  6. Slice and serve.
Note : 
  • The original recipe requires creme fraiche but it is not avaible in Nigeria so i substitute it with 1/2 cup cream, 1 tbsp curd and flour.
  • You can also use cream cheese and cream mixture.
